The clubs Bombax Brasserie is open 7 days for lunch and dinner serving a range of contemporary international cuisines ranging from modern Australian to Italian and a range in between. Using only the freshest ingredients there is sure to be something on the ever changing menu to wet your appetite.

Head Chef and owner Stanley brings more then 30 years experience having worked in many International Hotels, Star City, Novotel, Hurricane Grill and the Dedes Group.

 Try our 2025 Perfect Plate Entry: Herb Crusted Lamb Cutlets

Inspired by a love for fresh ingredients and bold, innovative flavours, this dish was created to celebrate an iconic Aussie classic – The Crumbed Lamb Cutlet.  The vibrant aromas of fresh rosemary, thyme, and sage complement the tender Australian lamb which is deep-fried to golden perfection. The exterior becomes wonderfully crunchy, creating a satisfying contrast to the tender, juicy meat inside. To accompany the lamb, we’ve added a smooth garlic potato purée, an earthy beetroot purée, and blanched broccolini to bring freshness, crunch, and a vibrant green contrast to the dish. A drizzle of peppery rocket pesto ties everything together, cutting through the richness and adding a bold, herbaceous lift. Available from Friday 2 May.
